Hmm... What can I do with Xylitol?

I'm thinking... brownies.

I have checked out Jorge Cruise's The Belly Fat Cure book from the library, you know, try before you buy. I'm thinking I just may have to treat myself to purchasing it soon. It sounds too good to be true. Though having tried a low-carb diet in the past, I believe his eating plan would do the trick for losing weight, and most importantly, help with symptoms of PCOS.

I've read online that it's a somewhat tricky task to swap out the sugar for xylitol. Xylitol does not caramelize like sugar, nor does it work with yeast doughs as it offers nothing to feed the yeast. Apparently the finished product is drier, so it is suggested to increase the wet ingredients in a recipe. Oh, and it can cause gastrointestinal distress and is deadly to dogs. So use with care.
