I've been reading about fat bombs on various low-carb sites and blogs. They sounded interesting. Well, actually, I thought they sounded sort of gross at first. Then interesting. Now that I've made my own? I discovered that they are pretty darn good. I just threw a little of this and that in a glass measuring cup and nuked it until nearly melted, stirred, then poured into my silicone molds and stuck in the freezer to harden. I'll keep them stored there so they are "out of sight, out of mind", less I eat them all within two days. They have a wonderful, melt-in-your-mouth texture... sort of like a Lindt chocolate, which, by the way, was my absolute favorite sweet ever. I will not keep thinking of Lindt, I will not keep thinking of Lindt... I did eat one in lieu of lunch today as we were out and about. While I'd like to be able to say, "it was so filling", as others have claimed, I was still wishing I'd had a bit of something more for lunch.
Fat Bombs
(made 8 servings at about 1.5g sugar/4.1g carb each)
1 - 1.19oz package Artisana Raw Cacao Bliss (cocoa coconut butter)
3T coconut butter
4T butter
1T cocoa
2T peanut butter
2 packets Nectresse sweetener
Now for some bellyaching notes for self:
11/5-11/7 It's now been several days of no sore or pained muscles. Well, other than the low-back pain that I've had for years. Today, the 7th, I did go to the school nurse to check my bp and it was 138/88, which is good to average for me. So I'm happy about that. Continued chest discomfort though.
11/12 On the 10th I checked my bp while at Walmart, which I'd figured would've been reason enough for it to skyrocket. It was down to 132/78! I realized this afternoon, the 12th, that my chest discomfort has not bothered me at all today and had barely disturbed my sleep last night. I did make an appointment for the 15th the other day to discuss the continued chest discomfort after reading that too much potassium could cause permanent damage to organs and death.
11/15 Saw my doctor. She said that it doesn't sound like it'd be my heart, thought muscle or nerve pain. I told her I didn't want her to pursue it as it appears to have stopped, which leads me to think it was most likely due to Losartan and it's just cleared my system finally. She did draw blood to check electrolytes and something about muscle enzymes or something (?) and I'll hear from them early in the week if there's anything worrisome. I was given the "OK" to going back to my workout dvd's and the couple of "power walks" I do in the winter during the week while D's at judo. Yippee! Oh, and she was glad to see my weight was down another 5lbs since I was last there.
