Day 44, 45 & 46 Belly Fat Cure & Buffalo Chicken Chili recipe!

Breakfast>1 Ezekial toast w/liversausage & cheese, 1/2c strawberries, coffee (s/c=4/2)
Lunch> bunless Wendy's deluxe burger (s/c=1/0)
Snacks> cold chicken fillet, coffee, pumpkin cake w/topping (s/c=1/1)
Supper> Pork & Sauerkraut Hotdish, pickle, cottage cheese with chia seeds (s/c=2/2)
Total s/c for today - 8/5

I skipped having a cheat day so far this week.  I'm hoping to see the numbers on the scale start moving again.  I also plan to have a great cheat day next week on Wednesday as husband, J, and I will be going out to eat after a dentist appointment.  So felt the need to cut back a little this week.

I've noticed an increase in anxiety feelings, which I'm certain has to do with an increase in coffee consumption.  So tomorrow I intend to steep myself a cup of spearmint tea instead.  I've read a couple of times now that this may decrease facial hair growth... I tried it once before, but wasn't consistent with it at all. Time to give it another go.  Oh, I also bought chia seeds today, which I've read is encouraged with the Belly Fat Cure plan.  It just so happened that they were even on sale at just a little over $5/lb.  I only bought a little over a half pound for now.  Not real sure what I want to do with them, though I've read lots of ideas. You can learn more about them by doing a simple search on Google or Yahoo.  I do know that they are a good source of fiber and that an increase in fiber just may get things moving better for me... no pun there.  I meant "moving" as in the needle on the scale, sillies!

Breakfast> 1 Ezekial toast w/pb & jam, coffee (s/c=3/2)
Lunch> Culver's Bacon Deluxe w/no bun, 6-8 fries (s/c=2/1)
Snacks> 3 strips of leftover steak, 1 sugarfree mini York pattie, 1/2c strawberries (s/c= 4/1)
Supper> Buffalo Chicken Chili, 6 Mission Triangle Tortilla chips, SoBe (s/c=4/2)
Total s/c for today - 13/6


I totaled the carbs and sugars of my ingredients and then divided the total by how many servings we got out of it when calculating the s/c count for the Buffalo Chicken Chili.  Per serving, I got roughly 4g sugar and 29g carbs.  Again, this is a rough estimate.


Buffalo Chicken Chili
(adapted from an emailed recipe from ?)
2 Tbsp olive oil
2 stalks celery, diced
2 Tbsp diced onion 
1 heaping Tbsp minced garlic
1.25 lbs chicken breast, cut into bite size pieces
1/2 of a 15oz can black beans
1-15oz can fire roasted diced tomatoes
1-8oz can tomato sauce
2 & 1/2 Tbsp. hot sauce 
Blue cheese crumbles

Heat olive oil in pot (I used a Dutch oven).  Add celery & onion.  When the onion begins to look translucent, add garlic and chicken.  Fry until chicken's done, add remaining ingredients, except blue cheese crumbles.  Let simmer until heated all the way through.  Ladle into bowl and top with blue cheese crumbles. (Which I did not use, the smell just turns me off.  Others say that the blue cheese is what makes the dish though.)  Tasted quite good for a little something different.

Breakfast> fried eggs w/ham & salsa, 1 Ezekial toast w/butter & jam, coffee (s/c=1/0)
Snacks> almonds, coffee, pumpkin snack cake (s/c=3/2)
Lunch> 1/2 serv. leftover low-carb pasta w/Bolognese Sauce, cottage cheese, 1/5 of an orange (s/c=5/2)
Supper> 1 & 1/2 pork chops, 1/8c mashed potatoes, 1/8c dressing, mushroom gravy (s/c=3/2)
Total s/c for today - 12/6
