Simple Pasta Sauce Recipe

Simple Pasta Sauce
(adapted from watching Rachael Ray's show the other day)
6Tbsp butter
1 large onion, peeled and cut in half
1 large clove garlic, peeled & smashed
1 - 28oz can crushed tomatoes
1tsp dried basil
1tsp fennel seeds

Melt butter in saucepan, add onion and garlic.  Heat until fragrant and vegetables start to brown.  Add tomatoes, basil and fennel.  Let simmer about 20mns.  Remove onion & garlic chunks prior to serving.

Breakfast> two fried eggs w/ham & cheese, 1 Ezekial toast w/butter & jam, spearmint tea (0/1)
Lunch> leftover of yesterday's breakfast, 1 pumpkin muffin (3/1)
Snacks> 1/3 of an apple w/pb (6/2)
Supper> Dreamfield's pasta w/Simple Pasta Sauce, pork chop, 1 green bean (4/1)
Total = 13/5

Yes, that is 1 green bean.

No clue on the count of the pumpkin muffins yet.  I'm averaging, when looking at similar recipes, around 4carbs per muffin, maybe a couple sugars thrown in for good measure for the small amount of dark chocolate that's in them, too.

Didn't feel good last night due to somewhat persistent chest discomfort.  Not sure what that's about, thought in the past that it was anxiety.  Still may be.  Though I'm suspecting that my daily coffee habit may be the biggest contributor, especially since both have been on the increase in the past month.  So I'm passing on the coffee today.  Already have a headache, I imagine from withdrawl, and my neck and shoulders have been bugging me... Just don't feel well in general lately.

Breakfast> scrambled egg w/rice, cheese & ham, coffee (1/1)
Lunch> 1 Ezekial toast w/pb, coffee (3/2)
Snacks> few almonds, 2 bite size pizza rolls, strawberry whey protein shake (5/1)
Supper> pork carnitas, smoked salmon (4/2)
Total = 13/6

  1. Yikes! How is your blood pressure? Chest pain is nothing to be nonchalant about. Better to get it checked out and it be nothing than to ignore it and it's something serious.

    Hopefully it's just the caffeine.

  2. Thanks for the concern. I do monitor my bp between visits with my doctor and it's been okay. I've actually had an EKG done twice (and a stress test) in the past for the same pain/discomfort. It appears to have been stress and caffeine related each time, thankfully.
